Seeing the spring come in has a way of instantly lifting our mood.  The brighter days, the beautiful new life in nature and we can almost hear the earth rejoicing.

This mood boosting healthy salad will give you the flavour of this new season.  Not only does it have a refreshing taste but contains potassium rich ingredients that will uel you with energy to blow away any remaining winter blues.

Potassium is a water soluble essential mineral found in fruit and vegetables. It carries an electrical charge that maintains fluid balance in the body. A balance of potassium in our body promotes normal nerve transmission, muscle contractions and heart function.  

What’s more, this salad is damn delicious both to the eye and to the taste buds!

– Vegetarian.  Gluten Free.  Serves 4 –

Salad Ingredients

  • 1 Medium Avocado
  • 2 cups Baby Rocket
  • 2 tbsp Fresh Basil
  • 1 Garlic Clove
  • 250g Pickled Sweet Beetroot
  • 500g Strawverries (quartered)
  • 1/4 cup Quinoa (toasted)
  • Salt and Pepper (to taste)

Dressing Ingredients

  • 1 tsp Dijon Mustard
  • 2 tbsp Apple Cider Viengar
  • 1 tbsp Olive Oil (organic, extra virgin)
  • 1/4 cup crumbled feta (you can also use vegan feta!)

Method

  1. Cook the quinoa according to the packet instruction.  Once quinao is fully cooked, spread out on a baking sheet.  Roast quinao for 7-8 minutes on 180 degrees, stirring halfway through and ensure to check frequently to achieve a crispy and crunchy texture. Set aside to cool.
  2. Combine the dressing ingredients in a small glass bowl and whisk to combine. Season with salt and pepper to taste.
  3. In a large salad bowl, add the salad ingredients and crumbled feta. Add the cooled quinoa and drizzle the salad dressing over the top. Toss to combine.
  4. Serve and ENJOY!!
